Nut Free Protein Balls

Perfect snacks to curb your appetite between meals, these Nut Free Protein Balls are a great addition to lunchboxes and handbags for those ‘just-in-case’ moments. Seeds provide protein and fibre for lasting energy, an you could also add a scoop of your favourite protein powder for an extra boost.

Preparation time: 15mins

Salted Caramel Protein Balls

200g Medjool dates, pitted
250g tahini (sesame seed paste)
1 heaped tbsp honey (or maple or rice malt syrup)
Pinch sea salt
¾ cup desiccated coconut, for coating

1. Place the pitted dates, tahini, honey and salt in a food processor and blend until the ingredients are well combined and coming together.
2. Roll heaped teaspoonfuls of the mixture into balls, and roll in desiccated coconut to coat.
3. Refrigerate for an hour before serving.

 

Very Berry Protein Balls

2 cups shredded coconut (plus extra for coating)
½ cup pumpkin seeds
1 cup frozen raspberries
1 heaped tbsp honey (or maple or rice malt syrup)
2 tbsp cacao powder

1. Place the coconut, pumpkin seeds, raspberries, honey and cacao in a food processor and blend until the ingredients are well combined and coming together.
2. Roll heaped teaspoonfuls of the mixture into balls, and roll in desiccated coconut to coat.
3. Refrigerate for an hour before serving.
